The command you tried above will give you results from the first entry in the hotlist. Additionally, this: C-u M-x eudc-expand-try-all RET will give you a list to choose from, of the completions from all servers in the hotlist. (There is also M-x eudc-set-server which sets the `eudc-server' and `eudc-protocol' variables, but you should probably just ignore all them, and focus on getting `eudc-server-hotlist' configured to your liking. This is an area I want to reorganize. Alexander has suggested having the `eudc-server' and `eudc-protocol' variables "point" into `eudc-server-hotlist'. Basically, I'd like the hotlist to be the only place the user needs to configure backends. One approach I see working for what you want, would be to add new EUDC backends for each of mail abbrevs and ecomplete, then in message-mode, make `eudc-expand-try-all' the default owner of the TAB keybinding when point is in a To:, CC: or other field that wants an email address.
