There are no libtree-sitter packages for Bullseye: https://packages.debian.org/search?keywords=libtree-sitter&searchon=names&suite=stable§ion=all BTW, as I'm on Debian Testing getting the package is no problem. What I don't know is how to install the parsers for the languages I'm interested on.
