I am running emacs from a text ssh session.

% emacs -Q
M-x server-start RET
M-x shell RET
% touch foo
% emacsclient foo
C-x b RET                  (switch back to shell buffer)
M-x comint-stop-subjob RET

I expected this to background the emacsclient process within the shell
window.  But it causes all of emacs to disappear from the screen, back
to the original shell prompt that launched emacs, where the emacs
process appears to have hung and can only be killed with C-c.

It sends SIGSTOP.

I know this isn't very helpful, but the only thing I can think to say is
"don't do that". Either use the normal C-x C-f to open a file, or if you
must call emacsclient from within a shell inside Emacs (?!), use the
--no-wait option.

There's more to it than that.  'killall -STOP emacsclient' works fine and suspends the
emacsclient process as expected.  And C-c C-c in the shell buffer, sending SIGTERM to
the emacsclient process, also works.  What is comint-stop-subjob doing which is more than
just sending the SIGSTOP?

By the way, running emacsclient inside an emacs shell buffer is quite common for me.
For example on 'git commit' or 'git rebase' etc, which prompt for a log message.
Simple version control operations can be done from emacs itself with vc-mode or other
libraries, but sometimes you want to go to the shell and run the raw git commands.
The same is true of other version control systems.

(I'm going through old bug reports that unfortunately got little response at
the time.)

I tried this in Emacs 25.1 (and Emacs 28), but was unable to reproduce
the problem.  Are you still seeing this issue in newer Emacs versions?

Following the original recipe I'm seeing a slightly different crash.  Emacs doesn't exit all the way back to the original shell prompt but hangs instead.  The output left on the screen looks fun:

I meant that originally, on killing the emacsclient process, the whole emacs process would kaboom.  Now the emacs process seems to hang instead of exiting altogether, but it's just as bad an outcome.

The outer Emacs process doesn't seem to hang for me?  The inner Emacs
process is stopped, and the outer process works as normal, as far as I
can tell?

For me the whole emacs process (outer one) hangs.  Normal Emacs keystrokes like C-g have no effect and it doesn't update the screen (so pressing Enter adds a blank line and scrolls up the whole screen).  I have to kill(1) it.

Since you've also followed the recipe and not seen the same result, I will check again carefully that there isn't some hidden step or configuration that triggers it.  I was running under GNU screen, which might have affected it somehow.

I've gone back to the original recipe, with no GNU screen and no .bashrc file to set environment variables.  It's as I described it back in 2015:

This is emacs-27.1 running on RHEL 8.4.  The build was originally derived from Fedora Linux but I rebuilt it on RHEL.  Do you want me to try a completely vanilla build from the tarball?

Ah -- I was running the outer Emacs as a graphical Emacs.  With "emacs
-Q -nw" I can reproduce the problem.
