In Carbon Emacs, running Emacs 22 and earlier versions, the display reverts to the standard black on white. Check if you have a file ~/Library/Preferences/org.gnu.Emacs.plist That file contained some of the settings from my .emacs, including the background color, so that deleting if from .emacs didn't have the desired effect. I'm not sure when and why that file was written. It is mentioned here http://www.gnu.org/software/emacs/manual/html_node/emacs/Mac-Environment-Variables.html as a means to save Xresources.
